Keema Samosas-  a popular Indian snack that features a crispy pastry shell filled with a savory keema of ground lamb and aromatic spices

Ingredients:

  • 1 pound ground lamb
  • 1/2 cup chopped onion
  • 1/2 cup chopped tomato
  • 1 tbsp minced ginger
  • 1 tbsp minced garlic
  • 2 green chilies, chopped
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp salt (or to taste)
  • 1/4 cup chopped cilantro
  • 12 samosa wrappers
  • Water (as needed)
  • Oil (for frying)

Instructions:

  • Heat oil in a pan over medium-high heat. Add cumin seeds and coriander seeds, and let them crackle for a few seconds.
  • Add chopped onions and sauté until they turn golden brown.
  • Add minced ginger and garlic, and sauté for a minute.
  • Add chopped tomatoes, green chilies, garam masala, turmeric powder, red chili powder, and salt. Mix everything together and cook until the tomatoes turn soft and mushy.
  • Add the ground lamb to the pan and mix well. Cook the meat until it is browned and fully cooked.
  • Stir in chopped cilantro and remove the mixture from heat. Allow it to cool.
  • Take a samosa wrapper and cut it in half lengthwise. Fold the cut edge over to form a cone shape and seal the edge with water.
  • Fill the cone with the meat mixture and seal the top edge with water.
  • Heat oil in a deep frying pan or kadhai on medium-high heat.
  • Carefully drop the samosas into the hot oil and fry until they turn golden brown.
  • Remove the samosas with a slotted spoon and place them on paper towels to remove excess oil.
  • Serve the Keema Samosas hot with chutney or ketchup.
