Aloo Gobi is a popular vegetarian dish from India, particularly in North Indian cuisine. The dish is made with potatoes (aloo) and cauliflower (gobi), which are cooked in a blend of aromatic spices, onions, tomatoes, and fresh herbs. Ingredients:

  • 1 medium-sized cauliflower
  • 2 medium-sized potatoes
  • 2 medium-sized onions
  • 2 medium-sized tomatoes
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala powder
  • Salt, to taste
  • Oil, for cooking
  • Fresh coriander leaves, for garnishing

Instructions:

  • Cut the cauliflower into small florets and peel and cut the potatoes into small pieces. Rinse them and keep aside.
  • Heat 2-3 tablespoons of oil in a pan on medium heat. Once hot, add cumin seeds and let them crackle.
  • Add the chopped onions and sauté until they turn translucent. Add the ginger-garlic paste and cook for 1-2 minutes.
  • Add the chopped tomatoes and sauté until they turn mushy.
  • Add the cauliflower and potatoes, along with turmeric powder, red chili powder, and salt. Mix well.
  • Cover the pan and let it cook on low heat for 15-20 minutes, or until the vegetables are cooked through.
  • Add garam masala powder and mix well. Cook for an additional 2-3 minutes.
  • Garnish with fresh coriander leaves and serve hot with roti, naan, or rice.
